A small sprig of this plant can turn beans into a gourmet delight with only minimal \u2018wind breakage\u2019 afterwards.\u00a0 Use it sparingly, however, because large quantities will impart a bitter taste to beans.\u201d<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">DESCRIPTION<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Probably the most distinctive aspect of epazote is its unique aroma \u2013 a blind man should be able to identify it! When seen for the first time, it might appear as a somewhat ragged and darker green lambs quarter (to which it\u2019s related).<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Epazote has a branched stem which can reach up to about three feet. The shiny-green leaves are elliptical, two to five inches long, and sometimes reddish tinged or blotched. The uniquely aromatic leaves are arranged alternately. The undulating leaf margin is slightly or entirely toothed. It\u2019s not uncommon to find it here in Southern California where it has become naturalized in some areas. The plant, which is sometimes cultivated, generally prefers waste locales and areas with somewhat poor, sandy soil. It seems to prefer the semi-shade along the bank of a sandy river or stream but will do well in rich garden soil when cultivated. Believed to have originated from central Mexico, it is now well naturalized throughout parts of the United States.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Miguel Gutierrez reports that once while fishing in Pyramid Lake, \u201cI ran into a thicket of wild epazote right at the edge of the water.\u201d<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">USES<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">According to herbalist Michael Moore (author of \u201cMedicinal Plants\u201d), \u201cThe leaves and seeds of epazote are a classic Mexican bean spice.\u00a0 It is called for in many traditional recipes, both to reduce the flatus levels, and to jazz up the taste.\u201d<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Epazote has long been popular in Central and South American and Mexican cookery as a culinary spice, especially in bean dishes since it prevents gas.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">According to Dr. James Adams, author of \u201cHealing with Medicinal Plants of the West,\u201d \u201cTwo of the treasures from Mexico are the prickly pear cactus and the epazote herb.\u00a0 I always add fresh epazote on top of my black bean dishes.\u201d<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\"><a href=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-15185\" src=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-300x200.jpg 300w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-1024x683.jpg 1024w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-768x512.jpg 768w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-1536x1024.jpg 1536w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-2048x1365.jpg 2048w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-90x60.jpg 90w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-563x375.jpg 563w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-06-600x400.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\"\/><\/a><br \/>You can make an infusion of epazote and drink it, but mostly it is added to cooked foods.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">PROCESSING<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Though fresh leaves can be added to dishes, the plant is usually dried first, which somewhat mellows the fragrance.\u00a0 The dried leaves are then crumbled into the pot of beans, or stew, shortly before being served.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">According to Miguel Gutierrez, \u201cEpazote is frequently used as a flavoring agent for beans, but by far, my favorite use of epazote is to make quesadillas.\u00a0 There\u2019s a particular style of quesadillas that\u2019s very popular in Mexico\u00a0 which includes <i>flor de calabaza<\/i> (squash\/zucchini flowers), epazote, saut\u00e9ed onions and fresh serrano chiles.\u00a0 It has a very strong scent and potent flavor which I really like.\u00a0 When you first bite into the raw leaf you get a rush of \u201cminty\u201d freshness through your mouth. It has a bit of \u201cbite\u201d in it and can have a slightly bitter aftertaste. This very strong flavor is what gives these quesadillas their signature taste.\u00a0 The potent flavors of epazote and chiles are tempered by the more subtle flavor of the <i>flor de calabaza<\/i>.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">In the early summer, when my kids find a small epazote plant hiding behind the tomato plants, they get excited and ask me to make them quesadillas with <i>flor de calabaza.<\/i>\u00a0 There must be something in the flavor that is agreeable to children because my kids and younger siblings loved to rip off a few leaves and chew on them for a bit.\u201d<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">ADVICE FOR GROWING<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Epazote can be successfully grown from cuttings that have been rooted in good soil or vermiculite, however, most gardeners start them from seed.\u00a0 Soak the seeds for a few hours in water before planting, and then plant them in a flat, or directly into the garden.\u00a0 The seeds seem to take longer than other seeds to sprout, and gardeners often forget they even planted the seeds.\u00a0 So make sure to label your plantings.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">WHEN TO HARVEST\/ AVAILABILITY<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">In colder climates, epazote will live as an annual.\u00a0 In the South and warmer environments, it will act more as a perennial, and will come up for a few seasons.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Harvesting the mid-sized epazote plants is easy.\u00a0 Just pinch off the top new growth.\u00a0 Pinch off just what you need at the time, or pinch back a lot if you plan to dry some of the herb for storage.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">The leaves are best harvested young, and dried.\u00a0 I prefer only the leaves in my cooking.\u00a0 However, you will observe that in Mexico, the entire above-ground plant \u2013 including the stem \u2014 is harvested, dried, and ground up for use in cooking.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\"><a href=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-15186\" src=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-300x200.jpg 300w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-1024x683.jpg 1024w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-768x512.jpg 768w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-1536x1024.jpg 1536w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-2048x1365.jpg 2048w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-90x60.jpg 90w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-563x375.jpg 563w, https:\/\/epictactical.com\/wp-content\/uploads\/2025\/07\/EPAZOTE-07-600x400.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\"\/><\/a><\/p>\n<p>Dried epazote, leaf and stem, as you would buy it from an herb company<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">MEDICINE\/NUTRITION<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Besides as a way to prevent or stop excessive gas, herbalist Gene Matlock says \u201cEpazote is also excellent for expelling worms from the body.\u00a0 The tea is also an excellent cure of the nerves and digestive organs.\u00a0 Epazote has become one of the most highly valued herbs in the Chinese materia medica.\u00a0 The Chinese use it as a diaphoretic, to strengthen the eyes and the circulation, to cure coughing up blood, and for dysentery.\u201d\u00a0 Matlock advises that one take this either in powder form or infused into a tea.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Dolores Miller-Nyerges of Los Angeles reported positive results with using epazote to rid cats and dogs of worms. She simply sprinkled a small amount of the dried and powdered leaves into their food. She also discovered that when she put epazote seeds and leaves in her chickens\u2019 water, it prevented some diseases common to fowl.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">CAUTIONS<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Pure oil of Chenopodium is toxic, so you sometimes see epazote listed in books of poisonous plants. However, epazote leaf contains only 1 percent of this oil, and such small amounts are ideal as a vermifuge or anti-flatulent. \u00a0A teaspoon or so of the seeds added to dog and cat food works wonders as a de-wormer and does not pose a threat to the animal\u2019s health in such low dosage. Eating moderate amounts of the cooked greens poses no health hazard whatsoever. However, due to the strong aroma of epazote, it is rarely cooked alone. Add approx. one tablespoon of the herb \u2014 both the chopped stems and the leaves \u2014 to a pot of beans. You can use it fresh or dried.\u00a0 The epazote herb can also be added to soups, stews, and made into tea. The powdered leaves can be added to salads, such as potato and bean salads.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Here are some simple recipes I\u2019ve developed for using epazote.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\"><b>\u00a0<\/b><\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\"><b>MAYA BLACK BEAN SOUP<\/b><\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">1 cup black beans<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">sage, pinch<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">water<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">oregano, pinch<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">3 onions<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">epazote, two tsp.<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">3 small potatoes<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">salt and pepper, to taste<\/p>\n<p class=\"ydp4a2a4032yiv1021409163ydp982cc5a0MsoNormal\">Cook the beans first for about an hour until tender.
